Peppercorn Crusted Burgers with Blue Cheese, Arugula and a Spicy Buffalo Sauce

Ingredients

1 1/2 lbs ground beef
2 teapoons Kosher salt
4 tablespoons cracked pepper
6 tablespoons butter
6 tablespoons hot pepper sauce
Vegetable oil for grill rack
6 ounces of blue cheese
6 Kaiser buns, split
Small bunch of arugula

 

Instructions

Preheat gas grill to medium-high. To prepare the burger patties, divide the meat into 6 equal portions. Form into patties though do not overwork the meat. Season patties with salt then black pepper. To prepare the buffalo sauce, place butter and hot sauce into a heavy, fire-proof pan. Set aside. Once the grill is preheated, place the pan with sauce on grill rack and cook until melted, stirring occasionally, Set sauce aside. Brush oil on grill rack and place burgers on the grill. Cook the burgers, covered, for approximately 5 minutes. Turn and cook for an additional 3 minutes then top burgers with blue cheese and cook until melted. During the last couple minutes of cooking. Place the buns on the grill, cut side down to lightly toast. To assemble the burgers, place burgers on bun bottoms, drizzle with buffalo sauce and garnish with arugula. Add bun tops and serve.
