Orange You Marvelous Burgers

Ingredients

1/2 CUP ORANGE MARMALADE
1/3 CUP MAYONNAISE
3 TABLESPOONS FRESHLY GRATED GINGER ROOT ( 1 TABLESPOON FOR ORANGE MARMALADE MAYO AND RESERVE 2 TABLESPOONS FOR PATTIES)
1/4 CUP FROZEN ORANGE JUICE CONCENTRATE ,THAWED
1/4 CUP SOY SAUCE
1 TABLESPOON FIRMLY PACKED BROWN SUGAR
1/2 TEASPOON FRESHLY GROUND BLACK PEPPER
1 TEASPOON KOSER SALT
2/3 CUP FINELY CHOPPED WATER CHESNUTS
4 LARGE FINELY MICED GARLIC CLOVES
5 MEDIUM SIZED FINELY SLICED SCALLIONS (3 FOR THE PATTIES AND RESERVE 2 FOR TOPPING THE MAYO TOPPED PATTIES)
2 POUNDS GROUND CHUCK
VEGTABLE OIL FOR BRUSHING THE GRILL RACK
6 KAISER ROLLS ,SPLIT
2 MEDIUM CHOPPED SCALLIONS RESERVED FROM ABOVE.

 

Instructions

PREPARE A MEDIUM HOT FIRE IN A CHARCOAL GRILL WITH A COVER OR HEAT A GAS GRILL TO MEDIUM HIGH. ORANGE MARMALADE MAYO: PLACE ORANGE MARMALADE ,MAYONNAISE AND 1 TABLESPOON OF THE GINGER IN A SMALL BOWL. REFRIGERATE UNTIL READY TO USE. PATTIES : PLACE REMAINING 2 TABLESPOONS OF GINGER ROOT, ORANGE JUICE CONCENTRATE, SOY SAUCE, BROWN SUGAR, PEPPER, SALT, WATER CHESNUTS, GARLIC AND 3 OF THE FINELY CHOPPED SCALLIONS IN A LARGE BOWL. MIX THE INGREDIENTS UNTIL BLENDED. ADD THE GROUND CHUCK. HANDLING THE MEAT AS LITTLE AS POSSIBLE TO AVOID COMPACTING IT, MIX IT WELL WITH ALL THE OTHER INGREDIENTS ALREADY IN THE BOWL.DIVIDE THE MIXTURE INTO 6 EQUAL PORTIONS AND SHAPE INTO PATTIES TO FIT THE ROLLS. BRUSH THE GRILL RACK WITH THE OIL. PLACE PATTIES ON THE RACK AND COVER WITH LID. GRILL UNTIL BROWNED ON BOTTOM ,ABOUT 4-5 MINUTES. TURN THE PATTIES OVER , CLOSE LID AND CONTINUE TO GRILL UNTIL DONE TO PREFERENCE ,ABOUT 5 MINUTES LONGER FOR MEDIUM. DURING THE LAST FEW MINUTES OF COOKING OPEN THE COVER AND PLACE THE ROLLS CUT SIDE DOWN ON THE OUTER EDGE OF THE RACK TO LIGHTLY TOAST THEM. TO ASSEMBLE BURGERS: PLACE A PATTY ON EACH ROLL BOTTOM. ADD ON EQUAL AMOUNT OF MARMALADE-MAYO ON TOP OF EACH PATTY. SPRINKLE EACH MAYO TOPPED PATTY WITH AN EQUAL AMOUNT OF THE RESERVED SCALLIONS. ADD THE ROLL TOPS AND SERVE . MAKES 6 BURGERS
