Nutty Gorgy Burger


2 Large Portabella Mushrooms – chopped/diced
¾ cup Gorgonzola cheese crumbled
½ tsp nutmeg
1 Egg yolk
½ cup toasted black walnut pieces
2 lbs ground chuck
3 tsp Herb de Provence
1 tsp liquid smoke
4 TBS Sutter Home Merlot wine
2 tsp sea salt
1 tsp pepper
Colavita Olive Oil for brushing of the grill racks
6 pieces of Focaccia bread from the bakery, if whole cut into 6 parts & sliced in half horizontally
6 TBS of chocolate/nut Spread


Step by Step Instructions – Filling: In a smal bowl: Chop/dice the 2 Large Portabella Mushrooms into little pieces, add to the bowl, then add, ¾ cup Gorgonzola cheese crumbled, ½ tsp nutmeg, 1 Egg yolk. Mix all ingredients well, separate and form into 6 disks or balls and refrigerate until building the burgers. Burgers: Start the grill and preheat (15 mins) to a temperature of 450 degrees In a small pan add the ½ cup of Black Walnut pieces and place on the grill over med/high. Keep a close eye on the nuts to insure they do not burn. Remove from heat and let cool until you mix your burgers. Turn off grill until burgers are ready. In a large bowl place the ½ cup toasted black walnut pieces, 2 lbs ground chuck, 3 tsp Herb de Provence 1 tsp liquid smoke, 4 TBS Sutter Home Merlot wine, 2 tsp sea salt, 1 tsp pepper. Mix all ingredients well. Separate the mixture into 12 equal parts and form into patties. Take 1 patty and place 1/6 of the filling in the middle and top with a second patty and seal the edges to form a stuffed patty. Place on tray and continue building the 5 other stuffed patties. Grease the grill racks with the Colavita Olive Oil. Start the grill and preheat (15 mins) to a temperature of 450 degrees. Place burgers onto the grill and close the lid, let cook 5 to 6 mins. Turn the burgers to create grill marks & cover, cook another 4 to 5 mins. Flip burgers, cover and cook 4 to 5 mins. Turn burgers to create grill marks, cover & cook another 4 to 5 mins. Slice the Focaccia into 6 squares and split horizontally, keeping tops with their partners and lightly toast the focaccia. Remove from heat and prepare to plate your burgers. During the entire time you are cooking the burgers, you are trying to maintain a grill temperature of 400 to 450 degrees. To plate: Place the bottom of the focaccia on the plate, spread each bottom with 1 TBS. of chocolate/nut Spread. Top with the burger and then place the focaccia lid on top and serve. 2006 – ToniLee
