No Wimpy Burger

Experimenting in the kitchen. I was in the mood for Mexican, my husband wanted burgers and the rest is history.


3# of ground chuck
1 small Vadalia onion-diced
1-11/2 oz. dry package of taco seasoning
1/4 cup Cilantro
1 10 oz. can of enchilada sauce(divided in half)
1 tbs salt
1 10 oz. can of Rotel tomatoes
2 cups shredded Mexican cheese
2 avocados sliced medium thin
juice of 1 lime
4 tbs olive oil
pinch of salt
pinch of pepper
1/2 cup sour cream
6 onion buns


Mix ground chuck, onion, taco seasoning, cilantro, 1/2 can of enchilada sauce and salt in large bowl. Mix ingredients well being careful to not over mix the ground chuck. Let sit at room temperature for 15 min. Shape into six equal patties and grill 5-7 minutes on each side over medium high heat with lid closed. Drain Rotel tomatoes. Top burgers with enchilada sauce, drained Rotel tomatoes and Mexican cheese. Leave on grill until cheese melts. Baste avocado slices in lime juice, olive oil, salt and pepper. Grill avocados. Remove burgers, top with avocado slices and sour cream. Serve on toasted onion buns.
