Naples Kobe Burger

I have always said that my mom makes the very best French onion soup. Everyone who tastes it agrees. In honor of her, I took all the ingredients of her soup recipe, added the best beef I could buy and created this fantastically flavorful burger. We are incredibly lucky to be able to buy Kobe beef from our butcher in Naples. Kobe beef not only makes the best tasting burger but is also much healthier for you. Our butcher recommended the Kobe ground chuck and went home to measure out the ingredients for this burger since we make this from shaking and pouring, and have never had to measure ingredients. I tried several different wine reductions including a blend of white and red merlot, and found the white merlot reduction to provide the best compliment to the spices in the Pickapeppa sauce.

Ingredients 

Burger:
2 lbs. Kobe ground chuck
2 Tbsp. Worcestershire sauce
1 Tbsp. Pickapeppa sauce
3 Tbsp. Sutter Home White Merlot wine reduction
onion topping for burger:
3 lg sweet onions, such as Vidalia
2 Tbsp. Grape seed oil
1 Tbsp. Worcestershire sauce
1 tsp. Pickapeppa sauce
3 Tbsp. Sutter Home White Merlot wine reduction
Gruyere cheese,thickly sliced small burger sized
Ciabatta rolls

Instructions 

Prepare the wine reduction: Take 2 small (187 ml) bottles of Sutter Home white merlot and cook over a low heat (low simmer) for approximately 45 minutes; until reduced by half. Set aside. This will be used in both the burger and the sauted onion topping. Burgers: In a large bowl combine: 2 lbs. Kobe ground chuck. 2 Tbsp. Worcestershire sauce 1 Tbsp. Pickapeppa sauce 3 Tbsp. Sutter Home White Merlot wine reduction Gently pat and shape burgers together in the palms of your hands. Set aside. These can be refrigerated until you are ready to grill them. Carmelized onion topping: Slice 3 large sweet onions, into rings. In a large pre-heated frying pan add 2 Tbsp grape seed oil. When hot add sliced onions. Saute onions over medium heat until medium brown and carmelized. To onions, add 1 Tbsp. Worcestershire sauce, 1 tsp. Pickapeppa sauce and 3 Tbsp. Sutter Home White Merlot wine reduction. Continue to simmer until well blended and set aside to be used as a topping. Building the Burger: Grill burgers to desired doneness. Add a generous mound of sauteed onions. Top with a thick slice of Gruyere cheese and allow to melt over onions. Put burger on Ciabatta roll and serve with a glass of White or Red Merlot.

We were able to visit Napa and Sonoma Vlleys this summer, while our son attended Camp outside Los Angeles. The only regret from out trip was that we were not able to take our son with us to Napa to show him the wonderful and beautiful vinyards and countryside. I'm very excited about the opportuity to return as a lucky contestant.
