My Summer Garden Burger

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

Parmesan Vegetables:
2 tablespoons Colavita Extra Virgin Olive OIl
1 medium zucchini, grated
1 small Vidalia onion, chopped in small pieces
6 button mushrooms, stems off and sliced thin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated parmesan cheese
Patties:
1 pound ground beef chuck
1 pound ground beef sirloin
1 tablespoon worcestershire sauce
1/4 cup dried bread crumbs
1 egg yolk
2 teaspoons lemon pepper
1/2 teaspoon garlic powder
Fresh Basil Mayo:
1/2 cup olive oil mayonnaise
1/4 cup finely chopped fresh basil

Olive oil for brushing on the grill rack
1/4 cup Colovita Extra virgin olive oil for buns
6 KIngs Hawaiian sandwich rolls
6 slices mozzarella cheese

 

Instructions

Preheat gas grill to medium high.
To make the parmesan vegetables, heat the oil in a fireproof skillet. Add the zucchini, onions, mushrooms, salt, and pepper. Cook, stirring occasionally, until vegetables are softened, about 10 minutes. Remove from heat and add the parmesan cheese and stir slightly to mix. Cover pan with aluminum foil to keep warm.
To make patties, combine chuck, sirloin, worcestershire sauce, bread crumbs, egg yolk, lemon pepper, and garlic powder. Handling the meat as little as possible to avoid compacting it, mix well. Form the mixture into 6 equal round patties. Cover and keep cold until ready to grill.
To make fresh basil mayo, combine olive oil mayonnaise and chopped basil in a small bowl and mix well. Cover and keep cold until assembling the patties.
Brush the grill rack with olive oil. Place patties on the rack, cover, and cook, turning once, until done to preference, 4 to 5 minutes on each side for medium and 6 to 8 minutes on each side for medium well. Brush patty side of roll with olive oil and place on rack and toast until golden brown.
To assemble the burger top the burgers with 1/4 cup of parmesan vegetables and 1 slice of mozzarella cheese, warm on grill just until cheese melts. Spread the toasted sides of rolls with the fresh basil mayo. Top 6 bottom halves of the rolls with a burger and then add top half of rolls. Serve immediately.
