Muy Delicioso Baja Burger

Ingredients

Hamburgers:
2 lbs ground chuck
1/8 cup Colavito Extra Virgin Olive Oil
1/8 cup Sutter Home Merlot
1 teaspoon Course Ground Pepper
Guacamole:
1 large or 2 small California Avocados
Juice of one 1 large Lemon
1 slice of Vidalia Onion chopped
2 Tablespoons Fresh Style Mild Salsa
1 Clove Garlic, Crushed
Baja sauce:
1 cup Sour Cream
½ package Taco Seasoning
1 Teaspoon Kosher Salt
6 Tablespoons Worcestershire Sauce
1 large Sweet Vidalia Onion, sliced in ¼ inches slices and brushed with 3 Tablespoons of Colavito Extra Virgin Olive Oil (plus 1 small Vidalia Onion for Guacamole)
8 ounces Monterey Jack Cheese with Jalapeno (or if not available other Monterey Jack Pepper cheese)
6 Hearty White Sandwich Roll or other large soft style bun
3 Tablespoons Butter (softened)

 

Instructions

About 45 minutes prior to cooking, gently combine following ingredients and handling as little as possible, shape into 6 patties with slight valley or indention in center (which will flatten out as cooked): • 2 lbs Ground chuck • 1/8 cup Colavito Extra Virgin Olive Oil • 1/8 cup Sutter Home Merlot • 1 teaspoon Course ground pepper For Guacamole, mash Avocados and stir in • Juice of 1 lemon juice, • 1 slice of Vidalia Onion, diced • 2 Tablespoons Salsa • 1 Clove Garlic Crushed Mix Baja sauce by combining 1 cup sour cream with ½ package taco seasoning and set aside. Prepare a medium hot fire and when ready, in 30-45 minutes, spread coals. Just before grilling, sprinkle hamburgers with Aunt Jane’s Seasoned Salt, add hamburgers to grill and close lid. Grill hamburgers for 3 minutes, turn ¼ to score Grill additional 2 minutes, and then top liberally with Worcestershire Sauce on both sides and flip. Grill additional 5 minutes. Brush Vidalia Onions with Colavito Extra Virgin Olive oil and add to grill. After 2 minutes, gently flip Vidalia Onions. Also remove hamburgers from direct heat and set to side on grill. Top with cheese and let rest for 3 minutes. While hamburgers are resting, spread buns with butter and add to grill, close lid and grill for 2 minutes or until golden. Remove all from grill, put Baja Sauce on lower bun, top with grilled Vidalia onion, then hamburger patty, and finally top with guacamole sauce, and enjoy your Muy Delicioso Baja Burger!
