Mouthfull of flavor Italian-inspired Burgers

Ingredients

2 Tablespoon olive oil
1/4 red onion, finely chopped
1 teaspoon salt
1 Lb. ground chuck
3 oz. pancetta
1/2 cup Sutter Home Merlot
1/2 teaspoon chives, finely chopped
1 teaspoon fresh garlic, minced or finely chopped with a knife
1/2 teaspoon oregano, finely chopped
4 ciabatta buns toasted
1 teaspoon horseradish sauce for each bun
4 slices of asiago cheese
4 slices of prosciutto ham
1/2 vidalia onion, sauteed with: 1/2 red bell pepper sliced, 4 large button mushroom sliced Instead of horsheradish sauce: an artichoke-jalapeno spread can be used to serve with the burgers.
2 artichoke hearts boiled and finely chopped, mixed with: 1 finely chopped jalapeno 1/2 cup grated asiago cheese

 

Instructions

Preapare a medium hot fire in a charcoal grill or a preheated gas grill on medium high both with cover. Brush the grill rack with olive oil. For the burger: Heat 1 Tablespoon olive oil in a pan and sautee a 1/4 red onion, finely chopped with 1 teaspoon salt. In a mixing bowl add to: the sauteed red onions, 1 Lb. ground chuck 3 ounce of finely cubed pancetta, 1/2 cup Sutter Home Merlot, 1/2 teaspoon chives,, 1 teaspoon fresh garlic, 1/2 teaspoon oregano. Mix all ingredients well, with your hands making sure that all ingredients are distributed evenly. At this point mixture is ready to be made into 4 equal size patties. Before the patties are put on the grill: In 1 remaining Tablespoon of olive oil, sautee 1/2 vidalia onion, 1/2 red bell pepper and 4 large button mushrooms. Now the patties are put on the grill, and carefully watched to cook on all sides evenly. The sliced buns can be also grilled if a toaster is not awailable. When buns are done, smear horsheradish sauce on all buttom buns. Before the burgers are almost done, add: 1 slice of asiago cheese on top of each burger, put on the grill top and wait until cheese is melted.Before lifting burger off the grill make sure to put 1 slice of prosciutto ham on each burger. At this point, burgers can be placed on the bottom part of the bun and topped with the onion, mushroom and pepper mixture. Add the top part of the bun to each burger, and have a wonderful experience of eating a Italian-inspired burger.
