MOROCCAN KFITA

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

It is quick and easy to prepare. All the ingredients are readily available at your local grocery store. Your mouth will feel like a party on the very first bite! It has been a family favorite recipe for so many generations. Although you can serve it on a traditional bun, or wrap I selected a Pita Bread for my recipe so that you can enjoy every morsel.
Best of you will not feel like you just ate a pile of bricks!

Ingredients:

MOROCCAN KFITA WITH AVOCADO SALSA AND CAESAR DRESSING

PATTIES

2 Pounds Lean Ground Sirloin
2 Raw Eggs
½ Large California Vidalia onion minced
2 Bunches of Fresh Italian Parsley chopped fine
½ tsp. Ground Black Pepper
½ tsp. Garlic Powder
¾ tsp. Paprika
¾ tsp. Ground Cumin
¼ tsp. Salt
½ tsp. Baking Soda dissolved in ¼ cup cold water
6 Pita Bread Pockets (White or Whole Wheat)

MEAT PREPARATION

Dissolve ½ tsp. Baking soda in ¼ cup cold water and set aside.
Combine all of the ingredients in a medium mixing bowl and mix well. Add the baking soda & water mixture to the meat ingredients and mix well again.
Form into 6 equal patties.

AVOCADO SALSA VINAIGRETTE

2 Medium size California Avocados diced
2 Medium size Tomatoes diced
1 Bunch (about 6 each) of Scallions chopped
1 Bunch of Fresh Italian Parsley chopped fine
1 Cup of Red Cabbage chopped
½ tsp. Salt
½ tsp. Ground Black Pepper
1 ½ Ounces of Colavita Aged Wine Vinegar
¼ Cup Colavita Extra-Virgin Olive Oil
5 Medium Cloves of Garlic chopped fine*

Combine all the ingredients in a medium mixing bowl and whisk well.
Pour over the Avocado Salsa and mix slowly.

CAESAR DRESSING

5 Medium Cloves of Garlic chopped fine*
½ tsp. Lea & Perrins Original Worcestershire Sauce
½ tsp. Grey Poupon Dijon Mustard
¼ tsp. Ground Black Pepper
1 Ounce Colavita Aged Wine Vinegar
1 Ounce Colavita Extra-Virgin Olive Oil
½ Cup of Hellmann’s Original Mayonnaise

Place all of the ingredients in a medium size bowl and whisk well.

*A total of 10 Medium Garlic Cloves is needed for the both the Vinaigrette and the Caesar Dressing. To save time, you can chop all 10 cloves at once and divide into two parts. Place 1/2 into Avocado Salsa Vinaigrette and the other half into the Caesar Dressing.

Instructions:

COOKING INSTRUCTIONS

Place patties in a pre-heated grill previously set at low-medium temperature or at
300 degrees depending on your gas grill settings. Grill for 3-4 minutes with the lid in the down position. Flip the patties over and continue grilling with the lid down for an additional 3-4 minutes or until your desired temperature preference is reached.

HOW TO “BUILD A BETTER BURGER”

Spread a generous amount of the Caesar Dressing on both insides of the Pita Pocket. Place one burger Pattie in the center. Add some of the Avocado Salsa to surround the burger and…. VOILA!!
