Montecalvo Burgers with Balsamic tomatoes

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

2 lbs.ground chuck
2 tbls.chopped sun-dried tomatoes in oil, drained
1/2 cup shredded parmesan cheese
3 tbls. chopped fresh parsley
1/4 tsp.salt
1/4 tsp.pepper
1/3 cup Sutter Home White Merlot
4 slices Italian bread, processed to fine crumbs
6 slices provolone cheese
2 medium tomatoes
3 tbls. balsamic vinegar and oil dressing
1/4 cup chopped fresh basil
6 Italian rolls

 

Instructions

Mix ground chuck,sundried tomatoes,parmesan cheese,parsley,salt and pepper together just to blend. Form into 6 patties. Put wine and bread crumbs in seperate shallow bowls. Dip patties into wine on both sides then into crumbs to coat. Oil grill rack and cook patties 6-7 minutes per side for medium. Place 1 slice of provolone onto patties right before removing them from grill ,just to melt. Remove patties and toast rolls, cut side down on grill. They toast very quickly. While burgers are cooking,slice tomatoes and place on a pie plate lined with paper towel to absorb water. After a few minutes, remove the paper towel and drizzle the balsamic dressing over the tomatoes. Set aside till burgers are done. To assemble burgers. Place burger on roll and top with a slice of tomato and some chopped basil.
