Montana Gold Rush Burger

Enjoying the summer days in Helena,Montana with the Livingstone family, panning for sapphires and hiking in the mountains, I was asked to be the cook for the night! What fun it was to share my favorite burger recipe with a few new additions thanks to the to the Livingstones who have a beautiful home among the gold rush mansions in Helena, Montana--they inspired the name--the Montana Gold Rush Burger with Livingstone sauce!

1 gold onion, chopped
1 garlic clove, crushed
1 lb extra lean ground beef
3 carrots, finely chopped
6oz mushrooms, sliced
3 stalks celery, slices
4oz crushed tomatoes
1/2 T tomato paste
2 teaspoons dried Montana herbs-basil and thyme
1/4 cup beef stock
1/3 cup Sutter Home white wine
Salt and freshly ground pepper

Place onion and garlic in a large saucepan and cook over low heat. Add carrots, mush rooms and celery to the pan and cook 5 minutes. Stir in tomatoes, tomato paste, mixed herbs, stock, wine, salt and pepper mix well. Pour ingredients into large glass bowl and cool. Add ground beef to mixture and blend ingredients with fork. Make into large patties and cook over medium heat until desired preparation. Garnish with basil sprigs.

The Livingstones enjoy their back yard for everything from family picnics to sapphire panning and we enjoyed the Montana Gold Rush Burgers under a perfect Montana big sky! p.s The Livingstone sauce is butter and garlic with salt to taste--wiped across the bun--a perfect gold vein!
