Molten Goat Thai Burgers

A new twist on the Twin Cities favorite "juicy lucy" cheeseburger where the cheese is put inside, instead of on top of the burger. This time the cheese is goat cheese and the burger is a flavorful blend of Thai seasonings in lean ground turkey.


2 lbs. lean ground turkey breast
1 egg
2 T. peanut butter
1 T. green curry paste
1 T fresh ginger, minced
1/4 c. bread crumbs
1/3 c. green onions, finely chopped
1 t. salt
1 t. pepper
12 large, fresh basil leaves
6 oz. goat cheese
1 T. olive oil
6 whole wheat hamburger buns


Thoroughly mix the ground turkey, egg, peanut butter, green curry paste, ginger, bread crumbs, green onions, salt and pepper together by hand in a large mixing bowl. Divide mixture evenly into 6 balls. Press each ball into two thin patties. Take one of the patties and place 2 basil leaves and 1 ounce of goat cheese in the center. Place the other patty on top of the first and seal the edges together tightly. Repeat with remaining meat until you have 6 basil and cheese- stuffed burgers. Brush grill with oil and grill burgers on medium high heat for 5-7 minutes on each side. Serve burgers hot on warmed whole wheat buns. Serves six.


Warning: Beware of molten goat cheese when eating fresh off the grill!
