Mock Crab Cakes

Turkey burgers prepared in the style of a Maryland crab cake, with  seafood seasoning, horseradish, cracker crumbs and mayonnaise. Finely grated zucchini and sweet onion keep the mixture moist.


6 finely crushed Saltine crackers
2 teaspoons seafood seasoning + 1/2 teaspoon
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 teaspoon fresh horseradish from jar
3/4 cup light mayonnaise (divided)
1 teaspoon sugar
1/2 cup finely grated zucchini
1/4 cup finely grated sweet onion
2 pounds fresh ground turkey
pure olive oil non-stick spray
1 tablespoon horseradish
seafood cocktail sauce
6 slices of horseradish cheddar cheese (about 3 ounces)
6 ciabatta rolls
6 Boston lettuce leaves
6 slices beefsteak tomato


Combine the cracker crumbs, 2 teaspoons Old Bay, salt and pepper in a large bowl. Add the horseradish, 1/4 cup of mayo, sugar, zucchini, onion and ground turkey to spice mixture in bowl; mix with hands till combined. Form into six burgers and set aside. Spray gas grill rack with olive oil and preheat grill to medium. While grill preheats mix remaining 1/2 teaspoon seafood seasoning, 1/2 cup mayo with the seafood cocktail sauce -set in fridge while burgers cook. Grill burgers about 15 minutes total, turning once till no pink remains. Split rolls and spray each half -grill briefly on top rack till lightly browned. Top each burger with cheese and close grill lid briefly to melt. Spread the seasoned mayo on each roll half. Place burger on bottom half and top with lettuce, tomato, and ciabatta top. Repeat with other five and serve immediately.
