Mo Pho

A big tasty bowl of Pho

Ingredients 

¼ Teaspoon Ground Star Anise Seeds

¼ Teaspoon Ground Cardamom Seeds

1/2 Teaspoon Ground Cinnamon

1/2 Teaspoon Ground Cloves

3/4 Teaspoon Ground Coriander Seeds

1 Teaspoon Sugar

½ Tablespoon Ground Black Pepper

1 Tablespoon Minced Ginger

1 Tablespoon Minced Garlic

1 Tablespoon Lime Zest

2 Tablespoons Fish Sauce

2 Tablespoons Sesame Oil

4 Green Onions thinly sliced (white and pale green parts only)

2 Pounds Ground Brisket

1.5 Teaspoons Sea Salt

1 Lime cut into 6 wedges

6 Sesame Seed Buns

6 Ounces Bean Sprouts

18 Thai Basil Leaves

18 Cilantro Sprigs

6 Tablespoons Sriracha

Instructions 

Make the patties: Mix together the star anise, cardamom, cinnamon, cloves, coriander, sugar, and black pepper. In a large bowl add the spice mix to beef along with ginger, garlic, lime zest, fish sauce, sesame oil, and green onion. With a large metal spoon, gently mix everything together so that ingredients are evenly distributed. Let the meat mix rest for 10 minutes. With wet hands form 6 equal sized meat balls and then gently pat them down into patties.

To grill: Heat grill to medium-high heat. Once the grill is ready, brush off with grill brush and oil using tongs and oiled paper towel. Sprinkle 1/8 teaspoon of sea salt on each side of each patty and then lay on the grill. Let grill for about 6 minutes on each side. Take patties off the grill and let rest for 5 minutes on a platter. While patties are resting place each bun (both halves) on the grill for 1-2 minutes, or until the outer edges start to brown slightly, then take off grill for burger assembly.

To assemble: Place one grilled patty on each bottom bun and squeeze one wedge of lime on each patty. On top of each patty place 1 ounce bean sprouts, then 3 Thai basil leaves and 3 cilantro sprigs. Smear 1 tablespoon of sriracha on the underside of each top half of bun and place on top for a delicious burger.
