Mexican Fresta Ole Burger

I wanted to taste something different in my burger.. but yet have a mexican flavor to it.So,I thought up this mexican burger. It has everything you would put in a taco. It's a juicy burger that will satisfy your mexican cravings on the grill. All I have to say is OLE!!!

Ingredients 

Pico De Gayo:
1/2 cup chopped fresh cilantro
1 medium red tomato diced
1 small onion diced
1/3 cup of fresh lemon juice
Guacamole Spread:
1 small onion finely diced
1/2 cup chopped fresh cilantro
1 medium red tomato,diced
3 haas avocados
Patties:
1 pound ground chuck
1 pound ground sirloin
1/4 teaspoon ground bay
1/4 teaspoon salt
1/4 teaspoon pepper
4 cloves of garlic,sliced
3 roasted red peppers,diced
1 tablespoon cilantro
1 medium onion,diced
1/4 cup zinfandel
1/4 cup white zinfandel
1/4 tablespoon red pepper flakes
2 cups of four cheese blend
Vegetable oil, for brushing rack
6 Kaiser rolls,spilt
3 cups shressed iceberg lettuce 1 8oz sour cream 6 slices of pepper jack cheese

Instructions 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. In medium sause pan place roasted red peppers,cilantro,onion, garlic and Sutter Home wine.Place on grill and cook until wine is cooked out.Remove the pan from the grill and set aside. To make pico de gayo,combine cilantro,tomatoe,onion and lemon juice in a smal bowl.Mix well to combine and refrigerate until serving. To make guacamole spead,cut avocados in half,remove seed and remove peel.Place avocados in a bowl,with potatoe masher,mash avocados until paste,add onion,cilantro,lemon juice,salt and tomato.Mix well to combine and refrigerate until serving. To make patties,combine ground chuck,ground sirloin,onion,ground bay leaf,salt,black pepper,karft four cheese blend and red pepper flakes.add in your mixed of roasted red peppers,cilantro,onion, garlic and Sutter Home wine.Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into equal portions and form the portions into patties to fit rolls. Brush the grill rack with oil.Place patties on the rack,cover and grill until brown.About 3 to 5 minutes. Turn the patties amd contuine grilling until done to perference, about 5 minutes longer for medium. During the last few minutes of cooking add Pepper jack cheese to the burgers. also carefully put kaiser buns on the grill cut side down,on the outter edge of grill to lightly toast. To assemble the bugers,place a generous amout of the gaucamole over the bottom cut side of the bun,On top side bun place a generous amount of sour cream,place burger on bottom bun, place a few lettuce leafs and pico de gayo salsa.Add the Roll tops and serve. makes 6 burgers
