Melt in mouth-tasty Burgers

Ingredients

Aioli sauce:
-2 eggs
-2 cloves garlic, minced
-1/4 cup olive oil
-1 teaspoon hot pepper flakes
-1 Tablespoon of lemon juice
Mix all ingredients in food processor
Topping:
-1 large vidalia onion (thinly sliced)
-1/2 lb large button mushrooms (thinly sliced)
-1 Tablespoon olive oil
-1 head of Boston lettuce
-4 big slices of fresh tomatoes
Patties:
-1 lb ground chuck
-1 teaspoon salt
-4 oz. pancetta finely cubed
-1/2 cup Sutter Home Merlot
-2 tablespoon Italian seasoning herb blend(oregano, thyme, sage, rosemary – in any combination)
-4 Kaiser or ciabatta rolls, sliced horizontally
-4 slices of Asiago cheese
Vegetable oil for the brushing the grill

 

Instructions

Directions for assembling the burger: Prepare a medium hot fire in a charcoal grill with a cover, or preheat a gas grill to medium high. -Make the Aioli sauce and set aside . -Put the sliced vidalia onion and the sliced mushrooms in a fire proof dish with 1 Tablespoon olive oil on the grill and make sure to get roasted until caramelized. A pinch of salt is always helpful to add. -Now is time to assemble the burgers: -In a medium size bowl: mix the ground chuck, salt, cubed pancetta, Merlot, Italian seasoning. Make sure to mix all ingredients evenly but also carefully not to handle the meat more than necessary. Make 4 equal size patties to fit the rolls. Brush the grill rack with oil. Place the patties on the rack and grill until browned, than turn over and grill an additional 5-6 minutes or until done to preference. -At the same time when you turn the patties over make sure to put the rolls on the grill but as soon as they are toasted golden take them off the grill and put them on the serving plates. -Place a Tabelspoon full of Aioli sauce on the bottom part of each roll, add 1 Boston lettuce leaf over the sauce and place 1 large tomato slice on top of the lettuce leaf. -1-2 minutes before the burgers are done, place 1 slice of Asiago cheese on each pattie and let the cheese melt on the burgers under de grill cover. -Place 1 pattie on the prepared bun buttom, add a good serving of the grilled onion and mushroom on top of the cheese and add about 1 more Tablespoonfull of Aioli sauce on top of the onion-mushroom mix. Cover with the top of the roll and, Bon Apetit!
