Mediterranean Gourmet Burger

I have designed this Mediterranean burger to be very savory and spicy and served with a mango chutney dijon yogurt dipping sauce. The bun I had developed for this burger is a classic Italian rosemary garlic foccacia dough that we shaped into a burger-sized bun.


Burger Recipe (serves 4)
1 lb. 85% lean ground beef
1 cup chopped sweet onions (caramelized until nicely browned in 2 T olive oil)
1 cup crumbled feta cheese
1 T finely chopped fresh garlic
1 T finely chopped fresh cilantro
1 T finely chopped fresh jalapeno pepper (stemmed and seeded before chopping)
1 T fresh squeezed lime juice
1 T ground cumin
1 t. salt
1 t. ground corriander
1 t. ground turmeric
1/2 t. ground white pepper
Mango Chutney Dijon Yogurt Dipping Sauce
1 cup Mango Chutney
1/2 cup plain yogurt
2 T dijon mustard


Burger procedure: Add ingredients in order in large mixing bowl. Combine well. Let set overnight in refrigerator for flavors to marry. Grill burger over charcoal grill to desired doneness. Serve on buttered toasted foccacia bun with thick slice of vine ripened red tomato and nice leaf of green leaf lettuce. Serve with dipping sauce on the side in small condiment bowl. Procedure for dipping sauce: Add all ingredients into food processor and process until smooth. Then refrigerate.


I have designed this burger and sauce to have a nice contrast between the savory spiceness of the burger and the mellow sweetness of the dipping sauce. The bun being of as much importance as any other part of the burger has been paid special attention to make sure that it thoroughly compliments both burger and sauce.
