RECIPES: Recipe Details
My ex-husband is from the Middle East and this is a combination of flavors from the foods he taught me to cook, and the herbs and spices of the region.
1/2 cup plain yogurt
1/4 cup diced cucumber
1 small white or yellow onion diced
1/4 cup chopped parsley
1/4 cup Kalamata olives
2 pounds ground lamb
3 cloves of garlic minced
1/2 tsp dried oregano
1/4 tsp crushed red pepper flakes
1/4 tsp cumin
2 tsp salt
1/2 tsp ground black pepper
Extra-virgin olive oil-to brush grill rack
6 pita bread
6 large tomato slices
6 large eggplant slices
For the yogurt/cucumber mixture: Combine first 5 ingredients completely and cover bowl. Keep refrigerated.
For the patties: Combine the lamb and the next 6 ingredients in a bowl and then form patties and cover with saran wrap and refrigerate.
Prepare a medium-hot fire in a charcoal grill with a cover or preheat a gas grill to medium high. When the grill is ready, brush the rack with olive oil. Place the six patties on the grill, cover and cook for 4 minutes. With a spatula, turn the patties over and cook an additional 4 minutes or until done to your preference. During the last few minutes of grilling, place the pita bread and the tomato and eggplant slices on the grill for 1-2 minutes on each side.
To assemble the burgers: Cut the top 1/8 of the pita and open the pocket, placing the burger with 1 slice of tomato and 1 slice of eggplant on either side of the burger and top it off with a generous portion of the yogurt/cucumber sauce.
A wonderful combination of Middle Eastern spices and flavors.
