A quick and easy burger that brings the wonderful flavors of the Mediterranean to our american standard.
1/2 cup of extra virgin olive oil
1/4 cup of fresh lemon juice
1 clove of garlic, minced
2 teaspoons of chopped rosemary (fresh)
2 teaspoons of chopped oregano (fresh)
1/2 teaspoon kosher salt
1 teaspoon of fresh ground pepper
2lbs of ground chuck
3/4 cup of chopped red onion
3/4 cup of crumbled feta cheese
6 greek pepperocini's chopped (stem discarded)
vegetable oil for grill rack
6 flame roasted whole sweet pimento peppers(vigo jarred)
6 1/4 inch slices of feta cheese(sandwich style)
1 loaf of sandwich sliced Mediterranean sun-dried tomato bread (found in grocery store bakery)
1 small bag of washed baby spinach
1 cup of mayonnaise
2 teaspoons of fresh chopped dill
In a small bowl combine: 1/2 cup of extra virgin olive oil 1/4 cup fresh lemon juice 1 clove garlic, minced 2 teaspoons of chopped fresh rosemary 2 teaspoons of chopped fresh oregano 1/2 teaspoon kosher salt 1 teaspoon of fresh ground pepper Whisk together and set aside In a large bowl combine: 2 lbs of ground chuck 3/4 cup of chopped red onion 3/4 cup of crumbled feta cheese 6 greek pepperocini's chopped (discard stems) Mix together to incorporate ingredients well. Add above marinade ,mix well being careful not to over work the beef. Cover and refrigerate for 20 minutes. Prepare grill for cooking by setting temperature to medium and lightly oiling grill rack with vegetable oil. For a gas grill it will take 10 to 15 minutes before it is ready for the burgers. While grill is heating up set aside the flame roasted peppers,bread and spinach. Combine 1 cup of mayo and 2 teaspoons of fresh chopped dill and set aside. Divide beef mixture into 6 equal portions and shape each portion into a patty about 1 inch thick. Place patties on the grill and turn every 2 minutes for a total of 8 minutes to be cooked medium. About 2 minutes before burgers are ready place bread slices on grill for 1 minute each side to lightly toast. Also at the same time place the 6 pimento peppers on the grill and a slice of feta cheese on top of each burger. Allow the peppers to grill for 1 minute turning once then remove and add to the top of the feta cheese on each burger. At this point transfer grilled bread to individual plates and top each bottom piece with about 6 leaves of baby spinach and a burger. Spread dill mayo on the top pieces of bread for each burger and serve.
All ingredients are easily found in any grocery store. Dry herbs can be used but the fresh herbs are best.
