Mediterranean Burger


3 (4 inch) portobello mushrooms, remove stem slice each into 6 even slices
3/4 cup Creamy Italian Dressing
2 Tbsp. olive oil
3 ounce package thinly sliced proscuitto, cut into 1/2 inch strips
2 pounds ground chuck
1 1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
2 tsp. minced garlic
1 Tbsp. Italian seasonings, crushed
1/3 cup chopped black olives
Vegetable oil for brushing grill
6 ounces goat cheese, cut into
6 equal slices and cut each slice in half
6 sandwich size ciabatta rolls squares, sliced in half for sandwich
48 baby spinach leaves, stems removed
4 (1/4 inch)slices of onion from a large red onion, divided into rings


Preheat gas grill to 375 degrees Farenheit Place sliced mushrooms in a 10-inch pie dish and coat with 1/4 cup Creamy Italian Dressing, set aside. Place a 10-inch cast iron skillet on grill, add 2 Tbsp. olive oil, when oil is hot add the sliced prosciutto on paper towels to drain, divide into 6 portions, set aside. To make patties, combine the beef, salt, black pepper, minced garlic, Italian seasonings, pepperoncini, and chopped black olives in a 3 quart bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the ciabatta. When grill is ready, brush the grill rack with vegetable oil. Place patties on grill, cover and cook, turning once, cook until done to preference, 4 to 5 minutes on each side for medium. After turning the patties place the slices of mushroom on the grill and cook for 2 minutes then place 3 slices of the mushrooms on each patty. One minutes before removing patties from grill place 2 pieces of goat cheese on each patty. Remove the patties from the grill to a 10 by 15-inch baking sheet, cover with a 9 by 13-inch pan and let rest grilling the rolls. Place the rolls cut side down on the grill rack for 1 minute or until bread starts to toast. To assemble the burgers, brush cut sides of ciabatta with Creamy Italian Dressing. On each bread bottom place 4-baby spinach leaves, red onion rings, a patty, a portion of prosciutto, and 4 baby spinach leaves. Add tops of rolls and serve.
