RECIPES: Recipe Details
My two favorite cuisines are greek and moroccan. Unfortunately, I married a 'meat and potatoes' only man. Not only was he the pickiest eater in the world, but his palate could not tolerate anything spicier that barbeque sauce or an occasional salsa. After ten years, I have finally started to wear him down. Not only will he try different foods and spices, he has found himself actually enjoying some of these recipes. This burger is a great example of how I have taken some of my favorites foods and incorporated them into something he would consider eating. Enjoy!
1/2 cup cooked couscous
1/4 cup chopped garbanzo beans
1/4 cup chopped red onion
1 tablespoon chopped garlic
2 teaspoons chopped parsley
1 teaspoon salt
1 teaspoon crushed black pepper
2 lbs. ground beef
8 oz feta cheese
5 oz jar of Sundried Tomato Paste
1 pack fresh spinach (washed)
1 package of seeded hamburger buns
Combine couscous, garbanzo beans, onion, garlic, parsley, salt and pepper. Add ground beef and mix well. Shape into 4 patties about one inch thick. Fold two ounzes of feta cheese into each patty. Grill over hot coals for 15 minutes, turning once. Spread tomato paste on the bun. Top with the hamburger patty and fresh spinach leaves.
