Marvelous Mushroom Burger Extravaganza

This is a burger recipe that is an alternative to beef, using whole portabella mushrooms in a Southwestern Style Burger. Perfect for those who don't want to eat meat, or just really love mushrooms! Serves 6


6 Large Portabella Mushrooms
6 Tablespoons of Olive Oil
3 Teaspoons of Southwest Seasoning
2 Whole Pablano Peppers ( plus 3 more Tablespoons of Olive Oil)
1 Large Sweet Onion
6 Slices of Pepper Jack Cheese
12 Slices of Tomato
1 1/2 cups of Shredded Lettuce 
Homeade Four-Cornmeal Buns
1/2 cup of Mayonaise
1/4 cup Taco Sauce


Special Southwestern Sauce: Combine mayonnaise and taco sauce and set aside. Season Mushrooms with Olive Oil and Southwest Seasoning and set aside. Cut Pablanos and Onions into strips. Gill Portabella Mushrooms and Sautee Veggies. Add Cheese to Grilled Mushrooms. Spread Homemade Sauce on both Sides of Bun. Add Mushrooms and Sauteed Veggies, tomatoes, and shredded lettuce to liking. Add more Sauce to Spice up your Mushroom Burger and ENJOY!
