Margarita Burgers with a Kick

Ingredients

Roasted Garlic Paste:
1 small bulb of garlic
1 tablespoon of Colavita Extra Virgin Olive Oil

Chipotle Mayonnaise:
3/4 cup mayonnaise
3 chipotle peppers in adobo sauce,finely
chopped
1 teaspoon roasted garlic paste

Patties:
1 3/4 teaspoons salt
1/4 teaspoon coarse ground black pepper
1/4 teaspoon cayenne pepper
3 large cloves of garlic,minced
1/2 cup minced yellow onion
1/2 cup finely chopped cilantro
1 tablespoon fresh squeezed lime juice
1 tablespoon tequila
1 3/4 pounds ground sirloin

vegetable oil for brushing grill rack
6 hamburger buns,split
6 tomato slices
6 green leaf lettuce leaves

Prepare a medium-hot fire in a charcoal grill or preheat a gas grill to medium-high.

To make the roasted garlic paste, slice off the top of the garlic bulb. Drizzle the olive oil over the exposed garlic cloves. Wrap it in aluminum foil and roast it on the grill,covered for 25-30 minutes or until soft. Squeeze out the cloves of garlic from their skin and mash into a paste with a fork.

To make the chipotle mayonnaise,combine the mayonnaise,chipotle peppers and the
roasted garlic paste in a bowl.

To make the patties combine the salt, black pepper,cayenne pepper,garlic,
onion,cilantro,lime juice and tequila in
a bowl. Add the ground sirloin and mix well,handling the meat as little as possible to avoid compacting it. Form into 6 patties to fit the rolls.

Brush the grill rack with oil. Place patties on the rack, cover and grill until browned on the bottom. Turn the patties and continue to grill until done to your liking. Remove patties from the grill. Place the buns cut side down on the outer edge of the rack and toast lightly.

To assemble burgers spread chipotle mayonnaise on the cut sides of the buns. On each bun bottom place a lettuce leaf, a patty, a tomato slice, then the top of the bun.
