Maple Bacon Burgers Supreme

I was shopping at a grocery store when I noticed they carried Focaccia rolls. I thought they would be amazing with a cheeseburger because you could have a double cheese taste. The other ingredients are my favorites because they blend well without losing the basic essence of the burger.

6 slices thick cut maple bacon
1 large white onion, chopped
1 large yellow bell pepper, cored, deseeded and chopped
1 ½ lbs ground beef
½ Tbs dry mustard
2 Tbs freshly chopped garlic
1 Tbs horseradish
1 tsp oregano
1 tsp black pepper
½ C canned black pitted olives, drained and diced
6 cheddar cheese Focaccia rolls, sliced
6 slices (¼ inch) of fresh mozzarella cheese

Preheat grill to medium heat. In a pan sauté bacon until brown then remove the bacon, save drippings. Sauté onion and peppers in drippings until onion is lightly browned. Remove vegetables and place into a bowl then brush grill with leftover bacon drippings. In a bowl mix beef, dry mustard, garlic, horseradish, oregano, black pepper and black olives. Mix in onion and peppers. Form beef into 6 patties. Grill patties 8 minutes on each side until 160 degrees. Brown inside of rolls lightly. Place the patty on top of the bottom part of the roll, next the cheese then the bacon and then top part of the roll. Serves 6
