I have lived on Long Island for my entire life and I would never want to live anywhere else. We have it all, the simple life to the decadent life. My burger represents the best of both. Our history of duck farming and home grown produce to our wineries and celebrity fame. My burger is simple to make but it will turn your ordinary backyard BBQ into a gold coast mansion gala.

Ingredients 

Goat Cheese Spread

4 ounces of goat cheese
2 ½ Tbsp mayonnaise
½ Tbsp chopped basil

Pattie Mixture

1 fresh ground Long Island duck (2.1) lbs
1 Tbsp chopped parsley
½ Tbsp chopped basil
½ Tbsp chopped oregano
¼ tsp black pepper
1/8 tsp salt
1 ½ Tbsp chopped shallots
2 cloves of garlic minced
½ Tbsp Worcestershire

Strawberry merlot sauce

½ lb of fresh strawberries
2 tsp sugar
1 tsp cardamom
1 tsp vanilla
1 cup of merlot

6 green leaf lettuce leaves
2 large Portobello mushrooms
½ stick of butter
6 bakery quality hamburger buns

Instructions 

Preheat a gas grill to 400 degrees.

To make the strawberry merlot sauce:

Remove the stems from the strawberries. Gently rinse them under water. Slice them and place in a 4 ½ quart fireproof stockpot. Add the sugar, cardamom, vanilla, and merlot. Place the pot on the BBQ. Close the top and stir the mixture every 5 minutes. When it starts to boil, stir every 3 minutes. Cook for 30-35 minutes until it becomes a marmalade consistency. Remove from the BBQ and set it aside.

While you are cooking the strawberry sauce, you can make the goat cheese spread and duck patties

To make the goat cheese spread:
Combine goat cheese, mayo, and basil in a small bowl and cream them together.

To make the patties:
Combine all ingredients in a large bowl and mix together by hand.
Place patties on a platter and cover with plastic and refrigerate until needed.

Brush the grill with oil. Put a small amount of oil on the Portobello mushrooms and grill them for 2 minutes per side. Remove from the grill and slice them.

Place the ½ stick of butter in a small fire proof pot on the top rack of the BBQ just until it melts. Set aside

Cook the duck burgers on the grill for 4 minutes per side at medium high heat.

Brush the buns with melted butter and place them on the grill for about 1 minute

To assemble the burger:

Place one leaf of green leaf lettuce on the bottom of the burger bun
Place duck burger on top of the lettuce
Place 3 slices of Portobello mushroom on top of the burger
Add a generous amount of the strawberry merlot sauce on top of the mushrooms
Take the top bun and spread a generous amount of the goat cheese spread

This burger is simply delicious. There is no other way to describe it. The ingredients really complement the duck and each other. Ground fresh Long Island Duck is such an incredible flavor and will surely become one of your favorites.
