Lemon Dilly Burger

Ingredients

Patty Ingredients:
2 T Extra Virgin Olive Oil
1 medium onion- chopped
2.25 lbs ground beef
Juice of ¾ a med lemon
Zest of ¾ a medium lemon
1 tsp Paprika
1 tsp kosher salt
2 T Worcestershire sauce
2 T fresh chopped dill
3 T frozen butter chopped into tiny cubes
Topping Ingredients (**repeated ingredients):
6 oz Havarti Dill cheese
1/3 c mayonnaise
**zest of ¼ a medium lemon
** juice of ¼ a medium lemon
**½ T fresh chopped dill
6 bun sized portions of green leaf lettuce
1 large beefsteak tomato
6 round bakery fresh Portuguese hard rolls (if not available, use any bakery fresh roll that is chewy on the outside and soft on the inside)

 

Instructions

Turn gas grill on to medium high heat. Using a grill safe frying pan or cast iron skillet, sauté the chopped onion in extra virgin olive oil, until completely caramelized (approx 7-10 min). In a large bowl, combine sautéed onions and the remainder of the patty ingredients. Form into 6 equal patties that are slightly larger than your buns. Grill patties on each side for approximately 7 min, or until meat is cooked to “medium”. Just before removing the patties, place the portions of Havarti Dill Cheese on the top of each patty. Allow the cheese to melt (1-2 min). Remove patties from heat, and turn off grill. While the patties are grilling, prepare the toppings. Slice the cheese into 6 equal portions. In a small bowl, mix together mayonnaise, lemon juice, lemon zest, and dill. Slice and prepare lettuce and tomato. Assembly: One each side of your bun, slather a generous portion of the mayo mixture. On the bottom bun, place the lettuce and the tomato. Next, place the patty and cheese, and top with the bun. Serve warm. This is a refreshing and “light” tasting summer burger.
