Koobideh French Feta Burger

I love to cook middle eastern food and Koobideh is my favorite type of Kabob. Its a Persian ground beef style Kabob

Ingredients:

Pattie

2 pounds Ground Chuck

2 Sweet Onion

8 garlic cloves

3 tablespoons of Turmeric

1/2 teaspoon of fresh ground pepper

2 teaspoons of kosher salt

3 tablespoons of ground sumac

Sauce

1 cup of Bulgarian yogurt

1/2 cup of cilantro

10 mint leaves

juice of 1 lemon

3 teaspoons of mayo

5 teaspoons of siracha hot sauce

Toppings

1 pound of cucumber

1/2 pound of carrot

5 teaspoons of mirin

4 teaspoons of rice vinegar

2 teaspoons of white wine vinegar

3 teaspoons of roasted sesame seeds

2 teaspoons of kosher salt

1 teaspoon of white sugar

3 roasted roma tomatoes

1/2 pound of French feta

BUNS

6 onion buns

10 teaspoon of melted butter

5 minced garlic gloves

Instructions:

Make a medium-hot fire and preheat

To make cucumber salad peel the cumber and carrot into long thin strips using a garnish peeler then mirin, rice vinegar, white wine vinegar. 2 teaspoon kosher salt, and sugar into a large Ziploc bag and place in fridge to cool.

To make sauce add Bulgarian yogurt, chopped cilantro, chopped mint, juice of lemon, mayo siracha

To make patties grate the 2 onion into a bowl using the large holes of a cheese grater then squeeze all the excess water out with a cheese cloth. combine onion with the beef, chopped garlic, turmeric, ground pepper, and salt. lightly roll out 6 patties to fit buns and cover with foil or plastic wrap.

Coat the rack with oil place the patties on grill and cover until the bottoms are caramelized. 3-4 minutes turn once until medium. During this time place the whole roma tomato on the rack to char. (cook on all sides of tomato until skin is nice and charred) Also melt 10 teaspoons of butter and add 5 minced garlic cloves. Brush the bottoms of buns with garlic butter and place on outsides of grill to toast. After the burgers are done top with ground sumac and french feta. Also slice the tomatoes in half and place them on top of cheese to help heat it through. Add the sauce to the bun and top with cucumber salad. add the buns and serve
