Jo's Basil Chicken Burger
I am a fool for Italian cooking. This is my attempt to immitate that style.
olive oil, about 1/4 cup, divided
2 lb ground chicken
4 cloves minced garlic
2 Tbs. balsamic vinegar
2 Tbs. honey
3 Tbs. finely chopped basil + 12 whole basil leaves
1 tsp. salt plus additional for topping
1 tsp. black pepper plus additional for topping
12 slices Mozzarella cheese
12 slices 1/2 inch thick, Italian bread
2 large slicing tomatoes, cut into 3 slices each
Lightly coat grill with thin layer of olive oil. Preheat grill to Medium heat.
In a large mixing bowl, mix ground chicken, garlic, balsamic vinegar, honey, chopped basil, 1 tsp. salt, and 1 tsp pepper. Shape into 6 burger patties.
Cook burgers on grill for approximately 5-6 minutes on each side. After the burgers are done, take them off the grill flipping them and placing 2 slices of mozzarella cheese on each patty. Place Italian bread slices on grill for approximately 1 minute on each side to lightly toast. Place each patty on 1 slice of bread. Top each with 2 basil leaves and 1 tomato slice. Drizzle each with olive oil then top with additional salt and freshly ground black pepper to taste. Top with remaining slices of Italian bread.
This burger is robust and flavorful. Good for the Italian in all of us.
