Jerk Burgers with Pineapple Chutney

Ingredients:

Pineapple Chutney

20 ounce can crushed pineapple, drained

1/4 cup finely chopped green onion

1/4 cup flaked coconut

1/3 cup finely chopped red bell pepper

1 tablespoon Tabasco Chipotle Sauce

1 tablespoon fresh minced ginger root

1 tablespoon fresh lime juice

1 tablespoon chopped fresh cilantro

1 teaspoon kosher salt

1 teaspoon fresh ground pepper

Patties

2 pounds fresh ground chuck

1 teaspoon Tabasco Chipotle Sauce

1 teaspoon sugar

1 teaspoon garlic, minced

¼ cup onion, minced

1 tablespoon Colavita extra virgin olive oil

6 tablespoons dry Jerk seasoning

Vegetable oil, for brushing the grill rack

6 Sesame Seed Buns, split

6 slices white extra sharp cheddar cheese

6 Red Leaf lettuce leaves

Instructions:

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To prepare Pineapple Chutney, mix all ingredients into bowl folding to ensure incorporation. Place into refrigerator prior to use on the burgers.

To make the patties, combine the chuck, Tabasco Chipotle Sauce, sugar, garlic, onion and olive oil into a large bowl. Mix well and handle the meat as little as possible. Divide the mixture into 6 equal portions and form into patties to fit the Sesame Seed Buns. Divide 1 tablespoon each of Jerk Seasoning over each side of burger. Cover with plastic wrap and set aside.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, approximately 5 to 7 minutes on each side for medium. Top each burger with cheese slices on the patties during the last 3 minutes of grilling. Place Sesame Seed Bunes on the outer edges of the rack to toast lightly, approximately two minutes. Remove the burgers and rolls from the heat.

To assemble to burgers place Red leaf lettuce leaves on Sesame Seed Bun bottom followed by a grilled burger, 2 heaping tablespoons of Pineapple Chutney. Place Sesame Seed Bun on top and serve. Makes 6 burgers.
