It's all Greek to me! Burger
Slice eggplant into 1/4 inch circles. Drizzle with olive oil. Add salt & pepper. Grill until soft (about 5 minutes on each side. Set aside.
2 pounds ground lamb
1-1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoon dried oregano (preferably Greek oregano)
Zest of 1 lemon
1/2 cup crumbled Feta cheese
1/2 cup yogurt (preferably Greek yogurt)
1/4 c chopped Kalamata olives
1/4 cup fresh mint leaves, chopped
fresh spinach leaves
Mix all ingredients except condiments. Form into 6 equal size burgers. Preheat gas grill to medium high. Grill burgers to desired doneness (about 8 minutes per side for medium). Toast 6 Hamburger buns. Serve burgers on buns with Tzatziki sauce, grilled eggplant and fresh spinach leaves.
