It’s All About the Harvest….Burger!

Ingredients

Harvest BBQ Sauce
1 16 oz. can of cranberry sauce
1 cup ketchup
¼ cup Sutter Home Merlot
¼ cup apple cider vinegar
2 tbsp. Grey Poupon Dijon mustard
1 ½ tbsp liquid smoke
½ cup brown sugar
¼ cup finely diced onion
2 tbsp. butter, cut in small cubes
Salt to taste
Harvest Burger
1 ½ lb ground chuck beef, 85% fat
¼ cup harvest bbq sauce
2 clove garlic, smashed
1 1/2 tsp fresh thyme, chopped
2 Tbsp. worcestershire sauce
Salt and pepper to taste
Caramelized Onions
2 whole onions, medium size, sliced thinly
1 ½ cups harvest bbq sauce
Additional Burger Toppings and Builders
2 Granny Smith Apples, cored and sliced crosswise into (6 to 8 slices per apple)
8 oz. smoked cheddar cheese, 12 slices
6 multi-grain whole-wheat burger rolls, sliced in half
Grilling Instructions
BBQ Sauce Put all of the ingredients into a sauce pan (except the butter). Whisk until smooth and slowly simmer on medium heat until the onions are soft and bbq sauce is bubbling (about 15 minutes). Add the cubed butter and stir. When the butter is melted, remove the sauce pan from the stove. After the bbq sauce has cooled down, pour it into a food processor using the chopping blade attachment. Pulse until the onion is blended and incorporated into the sauce. Caramelized Onions Put the sliced onion in a saucepan sprayed with non-stick spray. Pour 1 ½ cups of bbq sauce over the onions and caramelize over medium heat. Cook until onions are caramelized and are slightly browned. Cooking time should be about 10 minutes. Remove from stove and cool and keep separately. Burger Patties Combine the ground beef with all of the seasonings and form into 6 uniform firmly packed burgers

 

Instructions

Grilling Instructions 15 minutes prior to grilling turn the grill on medium and preheat the grill for barbecuing. Brush the grates with vegetable oil. Before the burgers are placed on the grill prepare the apple slices. Dip apple slices in bbq sauce and grill evenly on both sides. The apples should be firm to the bite. Remove from grill and put aside. Take the hamburger patties on preheated grill and turn heat up to high. When the bottoms of the burgers are charbroiled, turn over and baste with bbq sauce. Flip the burger 1 more time on each side and brush with more bbq sauce. Slightly before the burgers are done, place 2 smoked cheddar slices on top and melt the cheese. Meanwhile, place the cut side of the sliced rolls on the top grates (farthest away from the heat) and toast them slightly. Burger Assembly Place grilled burger with cheese on top of bottom of roll. Next place the apple slices on top of each burger and spoon a generous amount of caramelized onions on each burger. Finally put a little extra bbq sauce on top of the burger and cover with the roll.
