A burger in the italian tradition.
3/4 lb. ground beef.
1/4 lb. ground pork.
1 cup bread crumbs.
1/4 cup milk.
teaspoon of worcestershire sauce.
teaspoon of garlic powder.
1/4 cup finely chopped red onion.
two tablespoons of pecorino romano cheese.
tablespoon of extra virgin olive oil.
four slices of aged asiago cheese.
four scala rolls.
mix all ingrediants except salt and pepper together and press into four patties. add a dash of salt and pepper to each pattie side. heat grill to medium and brush on olive oil to cooking surface (grate). place patties on grill cooking surface at perimeter to ensure slower cooking. Once exterior of patties are browned flip once and add cheese to melt. Serve hot on scala rolls.
