Island Teriyaki Jamaican Jerk Sliders with Ginger Grapefruit Citrus Chipotle Mayo and Maple Mango Jicama Slaw

My Island Teriyaki Jamaican Jerk Beef Sliders celebrates the collaboration of American beef burger and the bold and flamboyant flavors of Jamaica.Jerk is a style of cooking native to Jamaica in which meats are dry-rubbed or wet marinated with a very hot spice mixture called Jamaican Jerk Spice. Jerk seasoning is traditionally used in chicken and pork but today it is applied to beef and fish. These Caribbean inspired beef sliders are saucy, spicy, sweet, tangy and exotic- A combination that will take you on a exotic Jamaica adventure!

Ingredients:

Ginger Grapefruit Citrus Chipotle Mayo:

3/4 cup mayonnaise with olive oil

3 tablespoons sour cream

3 tablespoons finely chopped cilantro

2 tablespoons fresh grapefruit juice

1 tablespoon grapefruit zest

1 teaspoon roasted ground ginger (prefer McCormick)

1 teaspoon minced garlic

1/4 teaspoon kosher salt

1 tablespoon minced canned chipotle chilies

Patties:

1 1/2 cups green onions, coarsely chopped

1 tablespoon chopped fresh thyme

2 medium jalapeño chilies, seeded, chopped

1 garlic clove, peeled

1/2 cup (packed) golden brown sugar

1/2 cup Colavita Extra Virgin Olive Oil

1/2 cup Island Teriyaki Sauce

1 teaspoon ground Jamaica allspice (prefer McCormick)

1/2 teaspoon roasted ground ginger (prefer McCormick)

1 teaspoon kosher salt

1/2 teaspoon black pepper

2 pounds fresh ground beef chuck

1/3 cup finely chopped cilantro

Maple Mango Jicama Slaw:

1/8 cup mayonnaise with olive oil

1 Tablespoon lime juice

1 Tablespoon maple syrup

1/2 teaspoon kosher salt

1/8 teaspoon pepper

3/4 cup jicama, julienned

3/4 cup orange bell pepper, julienned

1 cup shredded red cabbage

1/2 cup green onion, thinly sliced

1 mango, peeled and diced

Other ingredients:

2 tablespoons Colavita Extra Virgin Olive Oil

12 Kings Hawaiian sweet dinner rolls

12 (1/2-inch-thick) sweet onion slices

2 cups fresh watercress, chopped

Instructions:

To make the mayo, combine all of the ingredients in a small bowl and mix together. Cover and refrigerate until assembling the burgers.

To make the patties, Finely chop green onions, thyme, jalapeno, and garlic in a food processor. Add the sugar, extra virgin olive oil, island teriyaki sauce, Jamaica allspice, and roasted ground ginger; process until almost smooth. Season with the kosher salt and black pepper. Combine the ground beef and cilantro in a medium bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 12 equal portions and, using your hands, shape into patties about 3 1/2-inches wide; place in 13x9x2-inch glass baking dish. Pour 3/4 cup jerk sauce mixture over patties and turn to coat; let stand 20 minutes. Place remaining jerk sauce mixture into a small bowl; Cover and set aside.

To make the maple mango jicama slaw, whisk the mayonnaise, lime juice, maple syrup, salt and pepper until well combined in a medium mixing bowl. Add jicama, orange bell pepper , red cabbage, green onion and mango and stir until vegetables are coated with the dressing. Cover and refrigerate until ready to assemble sliders.

Heat a gas grill to medium-high. When the grill is ready, brush the grill rack with the extra virgin olive oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 3 to 5 minutes on each side. During the last few minutes of cooking, baste the patties equally with the remaining jerk sauce mixture and place the buns, cut side down, on the outer edges of the rack to toast lightly. Place the onions on the grill rack and cook until golden brown and crisp-tender, 2 to 3 minutes per side.

To assemble sliders, spread the cut sides of the buns with equal portions of the Ginger Grapefruit Citrus Chipotle mayo. On each bun bottom, top with equal amounts of fresh watercress, a beef patty, onion slice, and equal portions of the maple mango jicama slaw. Add the bun tops and serve. Enjoy!
