Island Burgers with Lime Horseradish Aioli

This particular Burger is influenced by tropical flavors and Creole Cooking, which has a plethora of cultural influences in the U.S.This particular burger combines Asian flavors with a lime/horseradish aioli that balances sweetness of fresh ginger, tanginess of lime, and heat of the horseradish. The name “Island Burgers” came as a result of complex flavors experienced on my travels to Caribbean Islands and Hawaii.

Ingredients:

Lime Horseradish Aioli

1/4 cup grated horseradish (bottled)

1/4 cup fresh lime juice

1/2 cup mayonnaise

1/2 cup sour cream

1 tablespoon fresh parsley

1 teaspoon kosher salt

1 teaspoon fresh ground pepper

Patties

1 3/4 pounds fresh ground chuck

1/4 pound fresh ground pork

1 teaspoon minced garlic

3 tablespoons Low Sodium Teryaki Sauce

1/2 teaspoon ground pepper

1 tablespoon fresh grated ginger root

1 tablespoon brown sugar

Vegetable oil, for brushing the grill rack

6 Large Sesame Seed Buns, split

6 slices Havarti cheese

6 Red Leaf Lettuce leaves

6 3″ Tomato Slices (each 1/4 inch thick)

Instructions:

Lime Horseradish Aioli

In blender or food processor combine all ingredients and process until smooth. Cover and chill until ready for use.

Patties

To make the patties, combine the chuck, pork, garlic, Teriyaki, pepper, ginger root, and brown sugar into a large bowl. Mix well and handle the meat as little as possible to avoid compacting it. Divide the mixture into 6 equal portions and form into patties to fit the Sesame Seed buns. Cover with plastic wrap and set aside.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, approximately 5 to 7 minutes on each side for medium. Top with Havarti cheese slices on the patties during the last 3 minutes of grilling. Place Sesame Seed Buns on the outer edges of the rack to toast lightly, approximately two minutes. Remove the burgers from the heat and let rest.

To assemble to burgers, place apply a generous amount of Lime Horseradish Aioli over each cut side of bun. Place Red Leaf Lettuce leaves on Bun bottom followed by a grilled burger and tomato. Add the Sesame Seed bun top and serve. Makes 6 burgers.
