Inside Out Wine and Cheese Burgers

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

2 pounds ground chuck
1 Tablespoon minced dried onion
1/4 teaspoon ground garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander seed
1/2 teaspoon celery salt
1/2 cup fancy shredded sharp cheddar cheese
1/4 cup finely crumbled blue cheese
1 cup Sutter Home Cabernet Sauvignon
1 cup store brand steak sauce
6 slices swiss cheese
6 toasted kaiser rolls
6 leaves of bibb lettuce
6 slices beefsteak tomato
18 + red onion rings
6 teaspoons spicy brown mustard

 

Instructions

Put ground chuck in a bowl and add next 5 dry spices. Using a fork, lightly toss dry ingredients into meat. Cover 2 large cookie sheets with wax paper. Use 1/3 measuring cup to portion out 12 equal portions of meat, and place on 1st. cookie sheet. In another bowl, mix cheddar and blue cheeses. On second cookie sheet place 2 portions of meat and make 2 large fairly thin patties. Place 2 Tablespoons of cheese mixture on one of the patties and spread out to 1/2 inch from edge of patty. Using wax paper, flip other patty on top of cheesed patty. Slightly crimp an mush two patty edges togther, flip burger into your hands and completely crimp burger edges and shape into a perfect burger. (be sure to completely seal burger all the way around) Continue until 6 burgers are made. Mix wine and steak sauce together in large measuring cup and wisk together. Pour all but 1/4 cup of mixture into a baking dish. Place burgers into dish and using a spoon cover the burgers with the marinade. Allow burgers to marinate 1 hour, turning and basting every 15 minutes. Grill burgers on hot grill, flipping 4 times, and basting with saved 1/4 cup of marinade until meat feels med-well.(remember cheese inside will alter feel of cooking temp), top with swiss slices and allow to just melt. Put 1 teaspoon of spicy brown mustard on bottom of toasted kaiser roll. Serve burger on bun with bibb lettuce, tomato, and approx 3 onion rings, depending on size of rings.
