i have been working on a chicken burger with some zing...not from habaneros but via thai/indian thru experimenting with varying amounts of certain ingredients i have found our family winner...


1 1/2 lbs chicken breasts -ground
2 0z. egg beaters
1/4 cup herb / cumin bread crumbs
2 tblsp/ indian hot curry paste (you can make it with dry ingredients then add olive oil or buy patak's)
2 tblsp. white wine
2 tblsp.of chicken broth
1/2 of large purple onion-chopped finely
1/4 teaspoon- fresh ground ginger root
1/4 cup of cilantro leaves(chop rough)
other spices as needed:
salt /pepper/more cumin or curry powder (depending on the heat level you want)
optional to serve with:
a tomato/red onion/garlic/cilantro salsa with some olive oil asigio cheese
english muffin


Put ground chicken in large bowlwith egg beaters and mix/then add all other ingredients except extra spices; mix well but do not over work the chicken..if need more heat--i.e adults for dinner vs. the kids... add more cumin, powdered curry and finally salt and pepper.... grill over medium grill till 165 degrss inside or no pink... serve with the tomato salsa and or melt some cheese on it serve alone or on a toasted englush muffin..


we tend to like it hotter so we use more hot curry paste along with more cilantro and even add some spice(hot peppers) to the tomato salsa...
