IDES OF MARCH BURGER

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

Dressing
2 garlic cloves, roughly chopped
2 anchovy fillets, flat packed in oil
1/2 teaspoon kosher salt
1/2 cup silken tofu
1/2 cup mayonnaise
1/2 teaspoon mustard powder
3 Tablespoons grated parmesean cheese
1 1/2 teaspoons Worcestershire sauce
1 Tablespoon white vinegar
1 Tablespoon fresh squeezed lemon juice
1 Tablespoon extra virgin olive oil
1/4 teaspoon black pepper
Patties
2 lbs ground sirloin 80% lean
2 teaspoons kosher salt
1 teaspoon black pepper
6 tablespoons grated parmesean cheese
3 thinly sliced pieces of prosciutto, cut in half lengthwise into 6 strips (approximately 1 inch width)
extra virgin olive oil for brushing grill rack
6 ciabatta rolls, split
extra virgin olive oil
3 cups shredded romaine lettuce hearts

 

Instructions

Prepare a gas grill to medium high To make the dressing, place the garlic, snchovy fillets and salt in a food processor. Blend until a paste forms. Add the remaining ingrediants and blend until smooth. Set aside in a small covered container. To make the patties, combine the sirloin, salt, pepper,and parmesean cheese in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the patties to fit the rolls. Once formed, wrap 1 slice of prosciutto around the side of each patty, pinch the end to secure. When the grill is ready, brush the grill rack with olive oil. Place the patties on the rack , cover and cook turning once, until done to preference 5-7 minutes on each side for medium. During the last few minutes of cooking, lightly coat the cut sides of the rolls with olive oil, place on grill rack until lightly toasted. During the last minute of cooking, toss the romaine lettuce hearts with 1/2 cup of prpared dressing in a medium sixe bowl. To prepare the burgers, spread 1/2 teaspoon of dressing on the bottom bun. Place patty on top of dressing, top each burger with an equal portion of the tossed romaine lettuce. Add the roll tops and serve. Makes 6 burgers
