Hot Mama Sita Chipotle Chicken Burgers with Spicy Summer Salsa and Cilantro-Lime Sauce

Ingredients

Cilantro/Lime Yogurt Sauce:
8 oz. plain yogurt
1/4 c. fresh cilantro finely chopped
1 Tbsp fresh lime juice
1/4 tsp salt
1/4 tsp pepper

Spicy Summer Salsa:
3 fresh nectarines, finely chopped with skin
1/2 small red onion, finely chopped
2 Tbsp fresh lime juice
1 medium jalapeño pepper (smell to see if the pepper has heat, use only one with heat), finely chopped
1/2 tsp. salt

Patties:
2 lbs. ground chicken
2 Tbsp chipotle pepper hot sauce
1/3 c. Sutter Home Moscato wine
1/2 c. plain breadcrumbs
1/2 (3.5 oz.) of 7 oz. can chipotle peppers, finely chopped
1 Tbsp Adobo seasoning, without pepper

6 slices Havarti with Jalapeño cheese
6 Whole Wheat buns
Vegetable oil (3 Tbsp just to coat rack prior to grilling)

 

Instructions

To make the cilantro-lime yogurt sauce: Combine together in a small bowl the yogurt, lime juice, and cilantro. Cover and refrigerate until patties are ready. To make the spicy summer salsa combine together in a medium bowl the nectarines, onion, lime juice and jalapeño. Cover with plastic wrap and set aside until patties are ready. Preheat a gas grill to medium-high or heat coals to medium-high heat for a charcoal grill.

To make patties: Combine together in a large bowl the ground chicken, chipotle pepper hot sauce, Moscato wine, plain breadcrumbs, chipotle peppers, and Adobo seasoning. Form into 6 patties. When grill is at desired temperature, brush grill rack with 3 Tbsp vegetable oil to coat. Place the patties on the grill, cover, and cook for 7 minutes. After 7 minutes, flip the patties to cook the other side for an additional 7 minutes or until center of patty reaches 165 degrees with a meat thermometer. Separate the buns and place on the top rack of your gas grill (or take burgers off of charcoal grill and place buns on rack and cover) to toast for 1-2 minutes. Take buns and patties off grill.

To build your burger, place patty on the bottom bun and top with cheese. Then add, 2 Tbsp spicy summer salsa. To complete your burger, spread the top bun with cilantro-lime yogurt sauce. Place on top of burger. Enjoy!
