Hot as Haites Pimento Cheese Stuffed Burger with Chipotle Mayonnaise

Ingredients

Hot as Haites Pimento Cheese
3/4 cup shredded sharp cheddar cheese
2 tablespoon mayonnaise
½ tsp. “hot” salt
½ tsp. pepper
1 small jar of pimentos drained and chopped
1 chipotle chili canned in Adobe sauce, seeded and minced
Chipotle Mayonnaise
¾ cup mayonnaise
¼ teaspoon cumin
1 chipotle chili chopped (canned in Adobe sauce), seeded and minced with 1 tsp of adobe sauce
Burgers
2 lbs ground chuck & sirloin (equal parts)
1tablespoon Grey Poupon Dijon Mustard
1 clove of garlic minced
1 tsp. Worcestershire sauce
¼ cup minced sweet onion
½ tsp. of “hot” salt
¼ tsp. pepper
¼ cup Zinfandel
Colavita Pepperolio Olive Oil for grill and rolls
6 jalapeno rolls, split

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the Hot as Haites Pimento Cheese combine the cheese, mayo, salt, pepper, pimentos and minced chipotle chili in a small bowl. Mix well cover and chill. To make the spicy mayonnaise combine mayonnaise, cumin and chipotle chile with the sauce in a small bowl. Mix well cover and chill. To make the burger patties, combine the ground beef, mustard, garlic, Worcestershire sauce, sweet onion, hot salt, pepper and Zinfandel. Handling the meat as little as possible to avoid over compacting it, mix well. Divide the mixture into 12 equal portions and form the portions into patties to fit rolls. Top six of the patties with equal portions of the pimento cheese. Cover each pattie with remaining 6 patties and press edges together to seal. When the grill is ready, brush the grill rack with olive oil. Place the patties on the rack, cover and cook, turning only once and until done to your preference, approx. 5-7 mins on each side for medium. During the final minute of grilling brush the cut side of each roll with olive oil, then place cut side down on the outer edge of the grill rack and toast lightly. To assemble the burgers spread a generous amount of spicy mayonnaise over each cut side of the rolls, place a burger patty on the bottom of the roll then add the roll tops and serve.
