Hickory Planked Burgers with Carmelized Onions & Gorgonzola
Planking gives this burger a special twist add the combination of carmelized onions, toasted sourdough rolls and gorgonzola cheese it makes it an unforgettable recipe you will want to make for all of your friends and family.
1 untreated 8 inch by 12 inch Hickory grilling plank
2 cups water
2 Ounces Dried Porcini Mushrooms
1 8 oz. Can Beef Consume
2 Cups Sutter Home Cabernet Sauvignon
2 Large Vidalia Onions
2 Tablespoons Unsalted Butter
2 Teaspoons Packed Light Brown Sugar
1 1/2 Pounds Ground Sirloin
1 1/2 Pounds Ground Chuck
3 Teaspoons Kosher Salt
1 1/2 Teaspoon Fresh Ground Pepper
6 thin slices Gorgonzola cheese
1/4 cup Olive oil
6 sourdough rolls, split
Take untreated Hickory plank and submerge in a clean container, filled with water and weighted down for two and a half hours. Preheat grill. Once grill is preheated, To make reduction, In a fireproof non-stick skillet add 2 ounces of dried porcini mushrooms to 1- 8 0z can beef consume and 2 cups Sutter Home Cabernet Sauvignon. Bring to a boil. Remove from heat, cover and let stand for 30 minutes. Strain mushrooms and liquid. Set mushrooms aside. Pour remaining liquid back into small skillet and bring back toa boil over medium high heat until liquid is reduced to a glaze like texture. Remove from heat. Set aside.Chop mushrooms into smallpieces. Set aside. In a large bowl, take the ground sirloin, ground chuck, kosher salt, fresh ground pepper, chopped mushrooms, and reduction and combine gently by hand buntil thoroughly mixed. Be gentle and do not over mix. Form 6 nice 1 inch thick patties. Cover and Chill for twenty minutes. Prepare Carmelized Onions 2 lg. Vidalia onions, thinly sliced 2 tbsp. butter 2 tsp. packed light brown sugar Cook onions in butter in pan over medium-high heat on the grill 20 to 30 minutes or until golden, stirring frequently. Stir in brown sugar; cook until melted. Keep warm.(Will Make about 1 3/4 cups). Prepare Hickory planks. Bring grill temperature to 425 degrees. Remove plank from water. Place plank on grill and close grill lid. Place plank approximately 8 inches from the flame. If you cannot control the distance of the plank from the flame closely monitor the gril during the preheating and cooking process.Plank will begin to smoke lightly. You may hear popping anc cracking as plank begins to bow and flex. After 3 to 5 minutes the plank will be lightly charred on one side and possibly bowed. Flip plank over, close grill lid. Wait 3 to 5 minutes. To plank grill burgers place patties immediately on prepared plank, close grill lid and cook 8-10 minutes. Flip burger close grill lid and cook for an additional 8 to 10 minutes. Remove Hickory plank with hamburgers from grill. Set aside. Place slice of gorgonzola cheese on each burger. Let cheese melt. Take each sourdough bun, split into half. Baste each bun on split side with olive oil, place each split side half on the grill until lightly toasted. Approximately 3-5 minutes. Remove from grill. To put your burger together take bottom half of grilled sourdough roll, top with hamburger pattie, and top hamburger patty with carmalized onion (about 2 Tbs. for each burger) Top all with grilled bun top and enjoy.
Serves 6. Enjoy with with a glass of Sutter Home Cabernet Sauvignon.
