Herb Lamb Burgers

Ingredients

3 lbs. ground lamb
2 1/2 tsp. Kosher salt
1 tbs. roughly chopped rosemary
1 tbs. roughly chopped thyme
2 tbs. roughly chopped greek oregano
4 cloves garlic finely chopped
1/4 c. plus 2 tbs. extra virgin olive oil
1/4 c. roughly chopped spearmint
12 oz. bottle cucumber dressing (for dipping)
1 lg. cucumber, peeled and cubbed (small cubes)
6 pita bread halves
3 sundried tomatoes (sliced)
12 oz. feta cheese(for sprinkling)
1 jar of black olives (large sized, sliced thinly)
small bunch of cilantro (for garnish, finely chopped)

 

Instructions

Step 1: Gather all ingredients and food prep appliances. Set-up food prep appliances. Step 2: Shape ground lamb into 6 patties, should be 1/2 lb. in size. Sprinkle both sides of all 6 patties with the 2 teaspoon of Kosher salt. Stir the 1 tbs. of rosemary roughly chopped, 1 tbs roughly chopped thyme, 2 tbs. roughly chopped greek oregano, 4 cloves of garlic roughly chopped, 1/4 cup plus two tbs. olive oil into a large glass mixing bowl. Scoop half of this marinade into a small saucepan for a topping after Lamb burgers are done. Smear both sides of the burgers with the remaining marinade and let them sit in the bowl covered until you are ready to grill. Step 3: Preheat grill between the tempatures 350-500 degree F (depending on how fast you want the burgers to cook). Lightly brush on oil over the rack of the grill. When grill is hot enough place the patties on the grill on direct heat cook between 8-10 minutes for medium-well or 8-12 minutes for well-done. Insert thermometer into center or side of patties. Allow grill marks to appear. Turn only once, do not press down on patties, it will let out the juices. Step 4: While the burgers is cooking the last 2 minutes place the saucepan on the grill with the reserved marinade, over medium heat adn srir until the garlic cooks 1 -2 minutes. Stir in the spearmint and remaining 1/2 tsp. of salt. Brush the herb oil over the burgers. Pour the 12 oz. bottle of the chilled cucumber dressing into a small glass bowl, add the diced cucumbers and the finely chopped cilantro, blend well. Step 5: Place pita bread onto the grill for about one minute before burgers are done, for 30 seconds turn once. When timer goes off remove pita bread from the grill plate. Place the cooked patties into the pita bread. Step 6: Lightly garnish with the cucumber dip,sundried tomatoes,feta cheese,and black olives. Enjoy!! Serve with a glass of Sutter Home wine!
