Heart Health Alternative Burger1

This is a great way to get your kids and friends to eat healthy. It is an easy recipe that you can "tweek" with whatever garden vegetables are on hand.

Ingredients 

4 portobello mushrooms, sliced
3/4 cup of shiitake mushrooms, finely chopped
2 onions, finely chopped
1/4 cup raw sugar
1/2 cup thinly sliced carrots
2-3 cloves of garlic, minced
1 cup of brown rice
1 1/2 cups of water
1/2 cup Sutter Home white wine
2 organic eggs
1 block of firm tofu 2
Tbs of extra virgin olive oil
2 Tbs of soy sauce
2 Tbs of miso paste
1 cup of Italian breadcrumbs
salt and pepper to taste

Instructions 

Saute mushrooms and garlic with olive oil, carrots and raw sugar over medium-high heat until carrots soften, mushrooms lose their moisture and onions begin to caramelize. Add minced garlic and stir while cooking for another couple of minutes. Add brown rice, water, white wine and soy sauce. Cover with a lid and cook until the brown rice has absorbed all of the water. Then, let mixture cool. Transfer rice and mushroom mixture into a food processor. Add organic eggs, tofu, miso paste, Italian breadcrumbs, salt, and pepper. Mix until the ingredients are smooth. Form mixture into patties. Refrigerate patties until they become firm. Cook patties over medium-high meat with olive oil until golden and cooked to desired consistency.

This is fantastic with garden fresh tomato, sweet onion slices, any type leafy lettuce, and your favorite variety of ketchup or mustard, with or without a toasted whole grain bun!!!!
