Hawaiian Spinach Chicken Burgers

Ingredients

1 lb ground chicken meat
1 1/2 cups shredded fresh spinach plus extra whole leaves for garnish
1/2 cup cubed cheddar cheese
1/3 cup chopped red onion
1/3 cup bottled teriyaki sauce
3 tbspn bread crumbs
1 tbspn vegetable oil
fresh ground pepper
4 tomato slices
fresh rolls, toasted gently

 

Instructions

Mix chicken meat, spinach, cheddar cheese, red onion, teriyaki sauce, bread crumbs, and vegetable oil in a large bowl. Season with fresh ground pepper. Refrigerate for at least one hour. Can be prepared in advance and kept in airtight container in refrigerator for up to one day. Shape into 4 equal size burgers. Grill on both sides until no longer pink in center (about 15-20 minutes total). Serve on fresh rolls lightly toasted on grill, topped with tomato and extra spinach leaves.
