Instead of a Luau, we BBQ in the backyard... but we can still give it a Hawaiian flavor!
Oil for grill
1 cup purchased sweet-and-sour sauce
2 teaspoons peeled grated fresh ginger
½ cup ground peanuts
3 tablespoons cilantro
3 garlic cloves, minced
¼ teaspoon cayenne pepper
1 ½ pound ground chuck
6 Hamburger Buns
1 can sliced pineapples, drained
Prepare grill. Stir together sweet-and-sour sauce and ginger and set aside. In a bowl with your hands mix peanuts, cilantro, garlic and cayenne pepper into the ground chuck until just combined (do not overmix) and form into six 1-inch-thick patties. Grill on a lightly oiled rack set 5 to 6 inches over glowing coals about 4 minutes on each side, then glaze with sweet-and-sour mixture and grill 1 more minute on each side, or until just cooked through. Lightly toast buns and grill pineapple slices 1 minute on each side. Transfer burgers to rolls and top each with a slice of pineapple. Serves 6.
