Hawaii 5 O Burger

The Hawaii 5 O burger is a pork burger with a citrus soy glaze.

Ingredients 

For the glaze:
1/2 cup low sodium soy sauce
1/2 cup sugar
2/3 cup orange juice
2/3 cup pineapple juice

For the patties:
2 pounds fresh ground pork
1/3 cup chopped scallions (light green and white parts)
3 tablespoons low sodium soy sauce
1 tablespoon garlic powder
2 teaspoons fresh grated ginger

6 (1/2 inch) red onion slices
6 (1/2 inch) pineapple slices
6 kaiser rolls

Instructions 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To make the citrus soy glaze: Combine the low sodium soy sauce, sugar, pineapple juice, and orange juice in a heavy fire-proof saucepan. Place the pan on the grill rack, bring the mixture to a simmer, and cook until reduced to a slightly thicker consistency, 15 to 20 minutes. Set the glaze aside.

To make patties: Combine pork with scallions, low sodium soy, garlic powder and grated ginger together. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls.

Brush the grill rack with oil. Grill the patties with the grill top closed for 4 minutes. Turn and grill until an instant-read thermometer inserted into the center of the patties registers 160 degrees F, about 4 minutes longer. During the last 2 minutes of cooking, place the Kaiser rolls cut side down to toast. Also, place the pineapple slices and red onion slices on the grill for a minute on each side.

To assemble the burger: Spoon and spread a tablespoon of the glaze on the bottom part of the roll. Place a pork patty on the roll and to finish it off drizzle the glaze on top of the burger then place the pineapple and red onion slices and add the roll tops and serve. Makes 6 burgers. Enjoy.
