2 POUNDS HALIBUT, CUT IN CHUNKS
2 – 3 TABLESPOONS SUTTER HOME SAUVIGNON BLANC
1/2 CUP PANKO
1/4 CUP CHOPPED FRESH CHIVES
1/3 CUP PACKED FRESH CILANTRO
1 CLOVE GARLIC
1 SLICE (1/2-INCH THICK) FRESH GINGER
2 TEASPOONS RED CURRY PASTE
1 TEASPOON GRATED LIME ZEST
1 TEASPOON SUGAR

CARAMELIZED PINEAPPLE
1 1/2 TEASPOONS CANOLA OIL
1 1/2 TABLESPOONS MINCED RED ONION
1 LARGE GARLIC CLOVE, MINCED
2 CUPS DICED FRESH PINEAPPLE
1 TABLESPOON LOW-SODIUM SOY SAUCE
1 1/2 TEASPOONS CHOPPED SEEDED RED JALAPENO PEPPER
1 1/2 TEASPOONS FRESH LIME JUICE
1 TEASPOON CHOPPED PEELED FRESH GINGER
1 1/2 TEASPOONS CHOPPED FRESH CILANTRO

Instructions

PREPARE MEDIUM HOT FIRE IN CHARCOAL GRILL OR PREHEAT A GAS GRILL TO MEDIUM -HIGH.

USING A FOOD PROCESSOR, PLACE FISH, WINE, PANKO, CHIVES, CILANTRO, GARLIC, GINGER, CURRY PASTE, LIME ZEST AND SUGAR; PULSE JUST UNTIL BLENDED.

SHAPE FISH MIXTURE INTO 6 PATTIES. CHILL WHILE PREPARING CARAMELIZED TOPPING.

PLACE A SAUCEPAN ON GRILL. HEAT OIL AND ADD ONION AND GARLIC; COOK 2 MINUTES. ADD PINEAPPLE; COOK 5 MINUTES OR UNTIL LIGHTLY BROWNED. ADD SOY SAUCE, PEPPER, JUICE AND GINGER; COOK 2 MINUTES. REMOVE FROM HEAT; STIR IN CILANTRO (MAKES ABOUT 1/2 CUP.

WHEN READY TO GRILL, BRUSH GRILL RACK WITH VEGETABLE OIL. PLACE THE PATTIES ON THE GRILL RACK AND COOK UNTIL BROWNED ON BOTTOM, ABOUT 3 MINUTES. TURN CAREFULLY AND COOK JUST UNTIL DONE, ABOUT 4-6 MINUTES.

DURING THE LAST FEW MIMES OF COOKING, TOAST BUNS, CUT SIDE DOWN, ON OUTSIDE OF GRILL.

PLACE A FISH BURGER ON BOTTOM HALF OF BUN AND TOP WITH SOME CARAMELIZED PINEAPPLE AND ROLL TOP.
