Happy Hickory Burgers with Crabby Slaw on Blue Cheese Garlic Toast

Ingredients

Crabby Slaw:
2/3 cup mayonnaise
2 teaspoons red wine vinegar
4 cloves garlic, finely minced (reserve 2 cloves for garlic toast)
4 tablespoons fresh italian parsley, finely chopped (reserve 2 tablespoons for garlic toast)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon celery salt
4 ounces flake style imitation crab meat pulled apart into strip-like pieces
4 ounces shredded cabbage (an equal portion to the crab meat) Patties:
2 pounds ground beef
1 1/2 teasoons salt
3 tablespoons hickory flavored liquid smoke
Garlic Toast:
1 1/2 sticks salted sweet cream butter, softened
2 cloves reserved finely minced garlic
2 tablespoons reserved finely chopped fresh italian parsley
12 pieces texas toast
4 ounces crumbled blue cheese
vegetable oil for the grill

 

Instructions

Directions Prepare a medium-hot fire in a charcoal grill or preheat a gas grill to medium-high. To make the Crabby Slaw, combine the mayonnaise,vinegar,garlic,parsley,pepperand celery salt in a bowl. Mix well. Add the crab meat and cabbage and mix well. Refrigerate until needed. To make the patties,combine the ground beef,salt and liquid smoke in a bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the meat into 6 equal portions and form into patties about 4 inches in diameter. Cover patties and set aside. To make blue cheese garlic toast,combine butter and reserved garlic and parsley. Cream together well. Spread the mixture on one side of each of the 12 pieces of texas toast. When grill is ready, place all 12 pieces of buttered texas toast on the grill, buttered side down. Using the whole tub of blue cheese, sprinkle even amounts on only 6 pieces of the texas toast. Put cover on grill and let cook 5-7 minutes or until cheese is melted and texas toast bottoms are light golden brown. Remove from grill and set aside. Brush vegetable oil on grill rack. Place patties on grill rack and cover. Let cook until browned on bottoms,about 5-6 minutes. Flip patties and cover again. Let cook until done to preference, about 5-6 minutes longer for medium. To assemble burgers: Note: buttered/grilled sides of garlic toast with be on outside of burgers. Put burgers on top of 6 cheese covered pieces. Divide Crabby Slaw into six equal portions and top each burger with a portion. Top with remaining 6 piece of garlic toast and serve.
