Guave-Glazed Cubano Burgers with Avocado Butter

Ingredients:

Glaze:
6 tablespoons guava jelly
1 tablespoon Sherry vinegar
1-1/2 tablespoons olive oil

Avocado Butter:
1 large ripe Haas avocado, cut into small chunks
2 teaspoons fresh lime juice
2 tablespoons reduced-fat sour cream
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon Habanero pepper sauce
2 green onion cut into pieces
2 tablespoons chopped fresh cilantro

Patties:
1/3 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons good quality low-fat mayonnaise
1 tablespoon Dijon mustard
1/4 cup dill pickle relish, drained
1 teaspoon Kosher salt
1 teaspoon paprika
1 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano leaves
1/4 teaspoon Habanero pepper sauce
2 pounds lean ground pork

6 slices deli smoked ham
6 slices Swiss cheese
6 Cuban roll or Kaiser rolls, cut in half horizontally
6 large red leaf lettuce leaves

Instructions:

To make the Guava Glaze: Combine all ingredients in a small saucepan; mix well and set aside.

To make the Avocado Butter: Place all ingredients in food processor; process until smooth and set aside.

Preheat a gas grill with a cover for 15 minutes to medium-high.

To make the Patties: In a large bowl combine onion, garlic, mayonnaise, mustard, relish, salt, paprika, pepper, cumin, oregano and Habanero pepper sauce; mix well. Gently mix in pork, being careful not to handle the meat too much. Divide the mixture into 6 equal portions and form into patties to fit the rolls.

When the grill is ready, brush the rack with oil or coat with grilling spray (Weber). Place the saucepan with the glaze on the grill; heat while whisking until jelly is melted. Place the patties on the grill and cook 5 to 6 minutes on each side, or until cooked through, basting frequently with the glaze. When the patties have about 2 minutes left to cook, place a slice of ham and one of cheese on each pattie. Close the grill lid and cook until cheese is melted. Place the rolls, cut side down, on the edge of the grill to toast.

To assemble the burgers, place lettuce leaf on bottom of roll and top with a pattie. Spread about 1-1/2 tablespoons Avocado Butter on the roll top.and place on top of pattie. Makes 6 burgers
