GRILLED CHICKEN PINEAPPLE BURGER WITH PIMENTO CHEESE, AVACODO, AND ROASTED RED PEPPER AOILI

i had a turkey burger from a local restaurant with roasted red peppers on it.it was delicious. i wanted to do something similiar and add a sweet element to it (the pineapple) and change the meat to chicken.

Ingredients:

4 CHICKEN BREAST, GROUND
2 SHALLOT
6 CLOVES OF GARLIC
4 tsp WOSTICHIER SAUCE
1.5 TSP TABASCO
4 TBLS ITALIAN BREAD CRUMBS’
2 TBLS MILK
1.5 TSP OF SALT
1.5 TSP OF PEPPER
6 BAKERY FRESH HAMBURGER ROLLS
6 SLICES OF FRESH PINEAPPLE, HALF INCH THICK
1 AVACODO
1 ROSTED RED BELL PEPPER
1/2 CUP OF MAYONAISE
12 OZ OF PIMENTO CHEESE
tabasco chipoltle sauce

Instructions:

mince shallot and garlic in food processor. add to ground chicken breast meat. add wostichier, tabasco, bread crumbs, milk, and salt&pepper. (may need more or less of breadcrumbs depending on moister) mix well and form into six patties. brush with olive oil and grill over medium heat until cooked thouroughly. while burgers are cooking, blend peppers and mayo until smooth to form roasted red pepper aioli. also grill pineapple for 5-8 minutes on each side until you get nice grill marks. the last couple of minutes that the burgers are cooking, top with pimento cheese until melted. when burgers and pineapple are finished on the grill, its time to dress your burger. spread aioli on toasted bun halves. top burger with pineapple and sliced avacado and a few dashes of chipotle tabasco depending on your heat level.
