Greek Style Stuffed Lamb Spinach Burger

Ingredients

2 pounds ground lamb
1 pkg frozen chopped spinach (drained to almost dry)
¼ cup chopped red onion
¼ cup chopped red pepper
2 cloves garlic crushed
2 tablespoons fresh (or ½ teaspoon dried) oregano chopped
½ teaspoon ground pepper
¼ cup Sutter Home Merlot Wine
Filling for burgers:
¼ cup chopped pitted Kalamata olives
½ pound feta cheese
Baste for Burgers
1 teaspoon meat marinade
2 Tablespoon Colovita Extra Virgin olive oil
2 Tablespoon Sutter Home Merlot Wine
Chopped Greek Salad for topping
1 cup thinly sliced baby greens or arugula lettuce
¼ cup chopped red onion
¼ cup chopped red pepper
¼ cup chopped pitted Kalamata olives
¼ chopped tomatoes
¼ cup chopped seeded cucumber
1 tablespoon fresh (or ½ teaspoon dried) oregano chopped
2 tablespoon Colavita Red wine vinegar
1 tablespoon Colavita Extra Virgin olive oil
¼ cup feta cheese (add feta cheese last)
Cucumber Spread
½ cup sour cream or plain yogurt (I use sour cream)
½ thinly sliced seeded cucumbers
salt and pepper slightly
a pinch of fresh garlic

 

Instructions

First make the burgers and refrigerate to keep burgers cold and easier to grill, but not neccessary. On the grill use a small amount of Olive oil in Saute pan. Saute ¼ cup onion and ¼ cup red pepper, crush the 2 cloves garlic. Take off grill, add dry chopped spinach (do not heat or cook spinach) add in ¼ cup red wine and 2Tblsp. oregano and ½ teaspoon ground pepper. Mix well then add in ground lamb do not over mix. Divide meat into 4 sections then divide each section into two patties. Top 4 of the patties with the feta cheese and kalamata olives, then put other pattie on top and press/seal together. I shape the patties into half moon shapes to fit the size of the pita…then baste with Kitchen banquet, wine and olive oil mixture, Refrig for at least one hour to firm up burger. (makes it easier to grill but not neccessary) In the mean time make the cucumber spread and refrig. Combine sour cream, thinly sliced cucumbers,salt, pepper and pinch of garlic, mix well. Chop Veggies for chopped salad but do not put the wine vinegar, olive oil and feta cheese til last minute to make it nice and fresh. Cook Burgers on medium hot grill approx 8 minutes each side. Heat up Pita Bread on grill. To assemble Burger spread Cucumber Sauce on pita, put burger on one half, fold up and top with fresh chopped greek salad.
